How to Use a Bread Knife

Loaves of bread require a special knife to help cut through them. Because a knife with a flat edge would squash the bread downward as you cut it, a knife with a serrated edge is needed to saw through the bread. The serrated edge of the bread knife both keeps the shape of the bread, and cuts through it with fewer crumbs.

Steps

    Make sure the loaf of bread you are cutting is completely cool. Warm bread can mash and tear more easily than cool bread, which makes the cutting more difficult than it needs to be.

    Hold the bread knife in your dominant hand.

    Choke up on the knife handle until your thumb and index finger are holding onto the blade itself just past the handle.

    Take care to position your hand on top of the knife and not below the sharp edge of the blade.

    Place the bread on a cutting board horizontally so you are looking at it lengthwise.

    Hold the bread down firmly in your non-dominant hand to help keep it from moving.

    Keep the hand on the bread far to the side of the section being cut.

    Position the back edge of the knife on the far side of the bread.

    Press down slightly on the knife.

    Pull the blade back towards yourself and press down at a slight angle to begin sawing through the bread.

    Push the knife forward and down again to make the next cut.

    Continue pushing the blade of the knife forward and back through the bread until it is cut clean through.

Tips

  • Make longer cuts through the bread by using the entire blade of the knife to cut with. This minimizes crumbs and makes the cutting process go much faster. Making shallow cuts with the knife results in ripping the bread.
  • Keep the arm of the hand holding the knife relaxed as you cut. By choking up on the blade, you have more control over it, which allows you to relax your arm as you cut.

Warnings

  • Bread knives have a serrated edge that can be extremely sharp. Always keep the hand not holding the knife to the side of the blade. Never cut toward yourself or place your hand beneath the blade of the knife.
