How to Make Vegetarian Yakisoba

One of the great things about being a vegetarian is to be unique with vegetables and how to integrate them in meals. You can always enjoy a burrito, sandwich, or even a quick and easy dish of yakisoba—literally "fried noodles in sauce. Try it!

Ingredients

  • 200 grams Chinese noodles (wheat)
  • 1 small onion, halved and sliced
  • 1 zucchini, sliced vertically
  • 1/2 of green bell pepper, cubed
  • 200 grams of string bean, trimmed and cut in half
  • 1 cup bean sprouts
  • 1 teaspoon ginger, grated
  • 1 tablespoon of oil (vegetable or sesame)
  • Egg roll, sliced
  • 1/2 cup teriyaki sauce
  • 2 teaspoons shiro miso
  • 1 teaspoon lemon grass paste
  • Fried onion flakes, for garnish
  • Beni shoga (pickled red ginger), for garnish

Steps

    Cook noodles according to the instructions on the package.

    Heat oil, fry ginger about 1 minute, add onion and pepper, fry 2 minutes, add string bean and zucchini, fry about 5 minutes.

    Mix teriyaki sauce, shiro miso and lemon grass paste, pour into wok, and mix well.

    Add noodles, mix, add bean sprout.

    Arrange egg roll slices on the plate, scoop 2 ladles of vegetable noodles, garnish with fried onion flakes and beni shoga.
