How to Make Summer Vegetable Crumble

A colourful, summery and extremely tasty vegetarian dish. Serve as a vegetarian lunch or supper dish or as an accompaniment to barbecued meat.

Ingredients

  • 1 aubergine, cut into 1.5 centimeter (0.6 in) chunks
  • 2 large courgettes, cut into 1 centimeter (0.4 in) rounds
  • 2 red or green peppers, seeds removed, cut into chunks
  • 1 medium onion, red or white, cut into chunks
  • 3 ripe tomatoes, cored and cut into chunks
  • 1 garlic clove, peeled and finely chopped
  • 2 teaspoons salt
  • 8 3/4 ounces bread crumbs
  • 3 1/3 ounces olive oil
  • Medium bunch of parsley, rinsed, dried, and finely chopped
  • 2 thyme leaves, finely chopped
  • Black pepper
  • Oil, for frying

Steps

    Pre-heat the oven to 175 °C (347 °F).

    Add oil to a heated pan over a high temperature. Add the aubergine to the pan and stir well. Fry for about 3 to 4 minutes until browned and cooked through. Scoop the aubergine out of the pan and into the oven dish.

    Fry the courgettes in the same pan for about 3 to 4 minutes. Remove them from the pan when it's golden brown. Add this to the oven dish.

    Fry the peppers for about 3 minutes. Stir and add this to the dish.

    Fry the onions and garlic. Fry the onions until they begin to soften and fry the garlic for about 30 seconds. Add both ingredients to the oven dish.

    Fry the tomatoes until fairly soft and then add them to the oven dish.

    Season with salt and pepper to taste and mix everything well.

    Create the crumb topping. Mix the thyme, salt, bread crumbs, and olive oil in a bowl. Spoon half of the topping in the oven dish and mix thoroughly. Then, spread the rest of the crumb topping on top of the dish.

    Bake for 30 minutes or until the topping is golden and crispy.
