How to Make Strawberry Soup

Chilled soup in a glass is a classy European food trend. This delightful strawberry soup is perfect for summer, served cold. It's a sweet surprise to the taste buds but a very pleasant one.

Ingredients

  • 1 kg strawberries
  • 150g extra fine sugar (caster sugar)
  • 1 orange, juiced
  • 1/2 lemon, juiced
  • Ice cubes

Steps

    Rinse and hull the strawberries. Put two strawberries aside for the garnish later.

    Blend the strawberries with the sugar, orange and lemon juices. Pour into a jug or bottle. Refrigerate for an hour or so.

    Create a strawberry straw garnish. Slice the two strawberries into rounds of equal thickness. Skewer each slice through a toothpick, so that it sits in place like a lollypop.

    Serve. The soup should be served chilled and fresh. Pour into a glass and add some ice cubes to each glass. Decorate with the strawberry straw garnish.

Tips

  • Even if the strawberries appear clean, still wash them. Commercially produced strawberries are subjected to many chemical processes to keep them looking fresh and desirable when they reach you, so unless they are organic, you will need to wash the residues off.
  • Add a few drops of Campari to each soup glass if you wish. It blends well with the strawberry flavour, adding a touch of herbs and orange peel.
  • To make it extra sweet add a bit of watermelon juice to the mix.
