How to Make Sri Lankan Curry Powder

This is a strong blend of flavours, with the roasting bringing out the spiciness.

Ingredients

  • 2 tsp coriander seeds
  • 1 tbsp cumin seeds
  • 1 tbsp fennel seeds
  • 1 small cinnamon stick, broken into small pieces
  • 6 cardamom pods
  • 6 cloves
  • 6 dried curry leaves
  • 1 tsp cayenne pepper

    Heat a heavy-bottomed pan or skillet until it becomes hot.

    Add the seeds, cinnamon and cloves. Dry roast them over medium heat. Stir constantly and heat until they turn dark brown.

    Remove from the heat. Leave to cool.

    Grind the roasted mixture with the curry leaves. Mix in the cayenne.

    Transfer to an airtight container. Use in curries and other Sri Lankan dishes.
