How to Make Sesame Prawn Toast

Ingredients

  • 225g uncooked prawns
  • 20g lard (animal fat)
  • 1 egg white, lightly beaten
  • 1 spring onion, finely chopped
  • 1 small piece ginger root, peeled and finely chopped
  • 1 tsp rice wine
  • 2 tsp cornflour
  • Salt
  • Large slices of bread
  • 100g sesame seeds
  • 1 - 2 pints vegetable oil, for deep frying

    Thoroughly defrost the prawns if frozen. Shell, de-vein and dry well.

    Chop the prawns with lard until they form a smooth paste.

    Mix the prawn paste with the salt, egg white, spring onions, ginger root, wine and cornflour.

    Spread the prawn paste thickly on one side of each slice of bread.

    Cut the bread into quarters, diagonally.
