How to Make Rudolf Poo (Chocolate Apricot Drops)

Little chocolate apricot drops that you can tell the kids are "Rudolf's poo" and listen to them groan. These are easy to make and take only about 20 minutes to prepare. They serve four. Ideal to leave with the stocking as evidence of Santa's visit...

Ingredients

  • 8 rich tea biscuits crushed (this means "hard" biscuits, British/Australian style)
  • 8 dried apricots chopped
  • 250 g chocolate chips
  • 4 tbsp golden syrup
  • Icing sugar or cocoa powder for dusting balls

Steps

    Crush about 8 rich tea biscuits in a bowl. Crush with your fingers or a heavy utensil such as a meat mallet. You can use a plastic bag on a counter top if preferred; just place biscuits in the bag and crush using a rolling pin.

    Chop up approximately 8 dried apricots into tiny pieces. This is best done on a wooden cutting board. Wash hands to remove stickiness before proceeding.

    Melt about 250g of chocolate chips over a pan of water. You can use either dark, milk, or white chocolate. Stir in the four dessert spoons of golden syrup.

    Stir the biscuit crumbs and apricots into the chocolate.

    Form the mixture into small balls with your fingers. Put the balls on a baking tray or plate covered in baking paper. Place in the fridge to harden for about an hour.

    Dust with icing sugar (or cocoa powder if you are using white chocolate). Serve and enjoy!
