How to Make Rhubarb Cordial

A cordial to make from food grown in your own garden. Rhubarb makes a surprisingly refreshing and tasty cordial that blends well with the spices added to it.

Ingredients

  • 900g, 2 lb rhubarb, chopped
  • 100g, 4 oz sugar
  • 2 cloves
  • 1.2 liters (0.3 US gal), 2 pints water
  • 6g, 1/2 oz root ginger
  • Mint leaves for garnish

Steps

    Simmer the rhubarb with the sugar, cloves and water. Also add the ginger but bruise it before adding.

    Simmer until the rhubarb becomes soft. If needed, add more water as the rhubarb simmers. This needs to remain a liquid or you won't get any cordial!

    Remove from the heat. Strain the liquid into a slightly warmed glass jug.

    Add the mint leaves for decoration. Serve. Add ice cubes to glasses before pouring in each serve.
