How to Make Potica (Povitica or Nut Roll)

Povitica or Potica is a delicious, mostly made at Christmas, nut roll recipe from Eastern Europe, specifically Slovenia. This mouthwatering bread is filled with hazelnut spread, crushed walnuts, and in this version, chocolate.

Ingredients

For the yeast:

  • 1 large cake compressed yeast (2 oz.)
  • 1/2 cup lukewarm milk
  • 1 tablespoon sugar

For the dough:

  • 1-1/2 cups milk
  • 3/4 cup butter (1-1/2 sticks)
  • 5 egg yolks (see tips and video section for pointers on separating egg yolks and whites)
  • 3/4 cup sugar
  • 2 teaspoons salt
  • 1 tablespoon vanilla
  • 7-1/2 cups all-purpose flour (sifted)

For the walnut filling:

  • 2 pounds walnuts (ground fine - best to buy pre-ground store bought Diamond brand walnuts)
  • 1 stick butter (1/4 pound)
  • 1/1/2 cups milk or half and half cream
  • 1 cup semi-sweet chocolate chips
  • 2 cups sugar
  • 1/2 cup honey
  • 1 tablespoon vanilla
  • Grated peel from 1 orange or lemon (lemon works best)
  • 5 egg whites
  • Cinnamon (as much as desired)

Steps

    Preheat oven to 325 °F (163 °C).

    Dissolve yeast in milk, add sugar and stir.

    To prepare the dough, add milk and butter to a saucepan. Put it on medium heat and stir continuously until boiling.

    Beat egg yolks, sugar, salt, and vanilla in a small electric mixer.

    Place 3 cups of sifted flour in a large mixing bowl and combine it with the yeast mixture, milk/butter, and egg/sugar/salt/vanilla.

    Beat with an electric mixer until smooth and elastic.

    Knead dough for 15 minutes. Add flour if still sticky.

    Put dough in a well greased bowl, cover with towel. Let the dough rise for 2 hours.

    Make the walnut filling. Melt butter then add milk, chocolate, honey, and sugar.

    Put ground up walnuts into a bowl and pour butter/milk/chocolate/honey/sugar mixture over the walnuts.

    Create a small well in the center of the walnut mixture, and pour the egg whites in.

    Place dough on floured table and roll to a large thin square.

    Spread the walnut filling evenly to every corner of the dough.

    Sprinkle with a generous amount of cinnamon.

    Roll the dough into itself, as tightly as possible until it forms a tube-like roll.

    Cover the pan with a towel and allow it to rise for 1 hour. Bake for 1 hour or until medium brown.

Tips

  • Crack eggs into medium bowl. Place an empty bottle opening over the top of an egg yolk. Squeeze the sides of the bottle then release. The yolk will go into the bottle. Squeeze the sides of the bottle over another bowl to release the yolk.
