How to Make Posca

Posca is a vinegar-based drink from Roman times. It was drunk by soldiers and working-class people. It is refreshing in a way similar to lemonade, another acidic, sweetened drink.


  • Brewed, not distilled, vinegar. Red wine vinegar, Balsamic vinegar, Asian black vinegar, or even naturally fermented cider vinegar are good.
  • Honey
  • Cold water
  • Ice cubes (optional)

    Put 1 to 2 teaspoons of good brewed vinegar in a glass.

    Add 1 to 2 teaspoons of honey and mix.

    Fill the glass with cold water and stir. Add ice cubes if you wish.

    Drink and enjoy.


  • Some recipes suggest adding some crushed coriander or other spices. If you do, strain them out before drinking.
  • Adjust the vinegar and honey to taste.
  • Vinegar drinks such as kurozu ("black vinegar") are popular in Japan.
  • Posca is especially good in hot weather.
