How to Make Peaches and Amaranth

This can be a meal, a side dish or a breakfast treat depending on your own preferences. Amaranth is a grain filled with protein, making ideal for those who need more protein in the diet without it being sourced from meat.


  • 1/2 cup amaranth
  • 1 fresh peach, medium size
  • 1 tablespoon maple syrup (or brown sugar)
  • Spices - a pinch of nutmeg and cinnamon

Part 1
Preparing the Amaranth

    Soak the amaranth grains in 1 1/2 cups of water. Leave to soak for 24 to 48 hours; the longer, the better.

    Drain the water through a sieve or small holed colander.

    Pour 2 cups of water into the saucepan. Add the soaked amaranth.

    Bring to the boil for one minute, stirring. Reduce the heat and simmer on low heat. Keep cooking until the grain swells. Amaranth takes about 30 to 45 minutes to cook.
    • Keep an eye on it as it cooks. Stir as needed.

    Turn off the heat. Remove from the pan. Drain if there is any water remaining. Allow to cool.

Part 2
Preparing the Peaches

    Dice the peach.

    Add the cooled amaranth and diced peach to the mixing bowl. Combine gently.

    Pour in the maple syrup onto the peaches and amaranth. Sprinkle with nutmeg and cinnamon. Gently mix through.

    Serve. This can be served as it is or you can add yogurt, whipped cream or other fruits.
