How to Make Maple Syrup Parsnips

A quintessential Christmas dish, maple syrup parsnips rely on the natural sweetness of parsnips and the sweetness of maple syrup as well to make a mouthwatering addition for the Christmas food table.

Ingredients

  • 1/4 cup olive oil
  • 30g butter or margarine, chopped
  • 1 kg parsnips, peeled and quartered along their length
  • Sea salt and freshly ground pepper
  • 4 tablespoons maple syrup (genuine, quality syrup)

Steps

    Preheat the oven to 220ºC (425ºF) .

    Place oil and butter in a roasting dish. Place in the oven to heat for 3–5 minutes. Once hot, remove from the oven.

    Add the parsnips to the dish. Sprinkle over the salt and pepper to season. Turn around to ensure each parsnip is thoroughly coated.

    Roast for half an hour. Remove once the parsnips are a light golden colour.

    Drizzle the maple syrup over the parsnips. Return to the oven to bake for another 5–10 minutes. Cook until golden in colour and sticky in appearance.

    Serve immediately. Transfer to a suitable serving dish, ensuring to capture the liquid from the baking dish.
