How to Make Lucky Rainbow Chex Mix

Chex mixes, trail mixes, and granola mixes are all great "on-the-go" snacks for any occasion, whether you are on a hike, road trip, or for a simple and quick after school snack.

  • Lucky Charms cereal, or another marshmallow based cereal
  • 6 cups Chex cereal
  • 2 bags (12 oz) white vanilla baking chips
  • 1/4 cup multicolored candy sprinkles

  1. 1
Pick marshmallows out from the cereal. Pour a good amount of the cereal on a baking sheet. Spread it out and divide the mixture: at least two cups of marshmallows in a small bowl (for later) and two cups of non-marshmallow cereal in a large bowl.
    • Put the remaining or unused cereal back into it's respectable container or box.
  2. 2
Add the Chex cereal with the non-marshmallow cereal. Lightly stir to combine.
  3. 3
Melt the baking chips. Add the chips in a microwave-safe bowl and heat on a high setting for two minutes. Stir occasionally until melted.
  4. 4
Pour and combine the melted chocolate with the cereal mix.
  5. 5
Spread the mixture on a parchment paper lined baking sheet. Give the entire mixture a good and even coating with the multicolored sprinkles immediately before the chocolate sets.
  6. 6
Allow the mixture to set, for at least 20 minutes.
  7. 7
Use your hands to gently break the mixture. Try to achieve bite sized pieces, but not too small.
  8. 8
Layer the marshmallows on top and enjoy.
