How to Make Linguine With Clams and Tomatoes

A light and fresh seafood pasta dish. Great with a glass of white wine and some crusty bread.

Ingredients

  • 14 ounces (400 grams) linguine
  • 2 ounces (60 ml) olive oil
  • 3 garlic cloves, finely sliced
  • 2 small red chillies, finely chopped
  • Salt and black pepper
  • 2 1/4 lbs (1 kg) clams
  • 4 1/4 ounces (120 ml) white wine
  • 17 1/2 ounces (500 grams) cherry tomatoes, cut into halves
  • 3 tablespoons freshly chopped parsley

Steps

    Cook the linguine. Add the linguine to a pan of salted boiling water and cook for 8 to 10 minutes or according to your taste.

    Heat the olive oil in the frying pan over a medium heat. Add the garlic and chilli and season with salt and pepper. Cook gently for 1 minute, then pour in the clams giving the pan a shake to mix everything together.

    Add the white wine and the tomatoes. Using the pasta tongs, stir the ingredients. Cover the pan with a lid and cook for 3 minutes or until the clams have opened.

    Drain the linguine. When the pasta is cooked, drain through the colander.

    Mix the sauce and pasta. Add the drained linguine to the clam sauce and mix together. Add the chopped parsley, mix well, then remove from the heat.

    Serve. Split the meal between four bowls.
