How to Make Ginger Gems



Ginger gems are a commonplace café treat in New Zealand. They are shaped like small cake loaves (you will need "gem irons"), easy to make, and absolutely delicious!

Ingredients

  • 50 grams (3.5 tablespoons) butter, softened (room temperature)
  • 1/2 cup (100 grams) sugar
  • 2 teaspoon ground ginger
  • 1 egg
  • 2 tbsp golden syrup
  • 1 cup (125 grams) standard plain flour (all purpose flour)
  • 1 teaspoon baking soda
  • 1/2 cup (120 milliliters) milk
  • Additional butter for spreading

Steps

    Preheat the gem irons in the oven to 200ºC/400ºF.

    In a medium sized bowl, cream the butter, sugar and ginger. Combine until light and fluffy.

    Beat in the egg, followed by the golden syrup.

    Sift the flour into the wet ingredients and stir through.

    Pour the milk into a jug and add the baking soda. Stir through to dissolve and stir into the cake mixture quickly.

    Drop a small bit of butter into each of the gem irons. Add cake mix to each gem iron.

    Place in the oven set at 200ºC/400ºF. Bake for 10 minutes or until golden brown. Remove from the oven and allow to cool on a wire baking rack.

    Serve. A dollop of whipped cream to the side makes this the ideal treat.

Tips

  • This recipe should make around 12 gems.
  • Keep stored in an airtight container for up to three days.
