How to Make English Fairy Cakes
Having a little tea party or making some fun desserts, this is a good place to start.
Ingredients
- 6 ounces (175g) self-raising flour
- pinch of salt
- 4 ounces (110g) softened butter
- 4 ounces (110g) caster sugar
- 2 large eggs
- 2 dessertspoons milk
- Topping
- Confectioner's sugar
- Marshmallows
Steps
- 1Combine all the ingredients (except the milk) in a food processor until smooth.
- 2Add the milk.
- 3Drop an equal quantity of the mixture into the paper cases.
- 4Bake on the center shelf for about 15-20 minutes at 350ºF/180ºC. Use a knife to check.
- 5Remove and leave to cool on a wire rack.
- 6When totally cold, mix the confectioner's sugar as per the direction on its packet and decorate however your imagination takes you.
Tips
- If you are on a gluten-free diet use your usual gluten free flour and add a teaspoon of baking powder. The cakes may not rise as much but they will be equally as delicious.
