How to Make Eggnog Tea Cookies



Eggnog cookies are a Christmas treat. Perfect to have with a glass of eggnog too.

Ingredients

Cookies

  • 2 cups all purpose flour
  • 2 tsp nutmeg, freshly ground (commercially ground is fine if you can't grind it at home)
  • 1/2 tsp table salt
  • 1 cup unsalted butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 2 tbsp eggnog
  • 2 tsp vanilla extract/essence

Eggnog icing

  • 3 cups powdered sugar
  • 1/4 cup softened butter or butter substitute
  • 1/3 cup commercial eggnog, or make your own eggnog

Steps

    Beat the flour, nutmeg and salt together and put to one side.

    Mix the butter and sugar together in a separate bowl. Cream together until smooth.

    Add the egg and vanilla extract and beat well to combine thoroughly.

    Add the flour mixture from the other bowl and combine.

    Place the dough into the refrigerator to chill for one to two hours. Cover with a clean, damp tea towel.

    Remove from the fridge. Roll the dough out and divide into small 1 1/2"/ 3 centimeter (1.2 in) balls.

    Preheat the oven to 350ºF. Line the baking sheets with baking parchment.

    Arrange on the baking sheets with 2" - 4 centimeter (1.6 in) space between them to allow for spread.

    Bake for 10 minutes or until slightly browned and firm to touch.

    Remove from the heat and allow to cool on cooling racks.

    Ice when cooled down. Mix the powdered sugar with the butter or substitute and beat in the eggnog gradually until the icing becomes smooth.

    Ice each cookie and add decorations such as chopped glazed cherries and sprinkled nutmeg. Or see image above for inspiration.

Tips

  • The dough can remain chilling for up to 24 hours.
