How to Make Dreamsicle Chia Pudding

The sherbet flavors of a Dreamsicle (which is different from a Creamsicle because it has ice milk instead of ice cream inside[1]) are refreshing on a hot day. This chia pudding is not quite as cold but is similarly delicious, and much healthier.

Ingredients

  • 1 orange
  • 1 1/2 cups milk
  • 1-2 tbsp agave nectar
  • 1 1/2 tsp vanilla extract
  • Chia Seeds

Steps

    Wash the orange.

    Using a microplane, zest the entire orange into a sealable container.

    Cut the orange in half and squeeze out all the juice.

    Add the milk.

    Add agave nectar and vanilla extract.

    Add the chia seeds.
    • If you like a thin consistency only add about 4 tbsp of chia.
    • If you prefer something more custard-like then add 5 or 5 1/2 tbsp of chia.

    Stir in the chia seeds and let them sit for another 10-15 minutes and stir again. Then seal the container and let it sit overnight in the fridge (or 6-8 hours).
    • By morning the chia seeds will have absorbed all the liquid and be fluffy and thick.

    Garnish with orange wedges and serve chilled.
