How to Make Crab and Aubergine Noodles

This Thai style dish is ideal for dinner. Here's how to make it.

Ingredients

  • 225 g (8 oz)brown and white crab meat
  • 175 g(6 oz)dried egg thread noodles
  • 3 tablespoons of vegetable oil
  • 1 aubergine(eggplant). About 225 g, cut into 5 x 0.5 strips
  • 2 cloves of garlic, finely chopped
  • 1 centimeter (0.4 in) of sliced galangal, finely chopped
  • 1 fresh green chili (take the seeds out). Again, chopped fine
  • 6 sliced spring onions
  • 1 tbsp fish sauce
  • 2 tea spoons lime juice
  • 1 and a half tablespoon of chopped coriander leaves

    Mash the brown crab and roughly mash white meat in a bowl. Then set it aside.

    Add noodles to a saucepan of boiling salted water and cook them for about 4 minutes until just tender. Drain it.

    Meanwhile, in a wok, heat 2 tablespoons of oil and add the aubergine.

    Stir fry for about 5 minutes until it's evenly well coloured. Take it out of the wok and transfer it to some absorbent kitchen paper. Set it aside.

    Add remaining oil to wok, heat it up and then, one-by-one stir in the garlic, galangal, chili and the spring onions.

    Add the noodles, then mix it together for 1 minute.

    Add in the crab meat and aubergine.
