How to Make Couscous Salad

Served hot or cold, enjoy this dish as the main entrée or an appetizer. Here is a recipe for a couscous salad.

Serves 4 people.


  • 16 ounces (500 grams) of cous cous
  • a large red onion
  • 5 tablespoons of olive oil
  • 15 ounces (400 ml) of boiling water
  • 4 ounces (125 grams) of chopped peanuts
  • 4 ounces (125 grams) of dried, chopped apricots
  • 4 ounces (125 grams) of sultanas
  • 7 ounces (220 grams) of sun dried tomatoes (roughly chopped)
  • 1/2 of a cucumber (chopped)
  • juice of two lemons
  • a bunch of coriander (chopped)
  • salt and pepper

    Combine the couscous, a pinch of salt, 2 tablespoons of the olive oil, and boiling water into a bowl.

    Give the mixture a quick stir and place a lid on the top. Place it on the side until later.

    Get the other bowl and mix the chopped onion, peanuts, apricots, sultanas, dried tomatoes, cucumber, coriander, and lemon juice. Mix everything together well.

    Pour the mixture into the couscous bowl.

    Stir everything together and season with salt and pepper.

  • You can change/modify this recipe to your liking. The tomatoes can be omitted and you can add butter if you wish.
