How to Make Cold Christmas Pudding

A very fast version of a pudding if you missed the boat making or buying one in time! This is also ideal for a very hot Christmas, or just because there are guests who don't fancy the usual kind of Christmas pudding.

Ingredients

  • 500g mixed dried fruit
  • Jelly made from boiled fruit liquid (see steps below)
  • 1 - 2 tbs port or red wine (red grape juice is a fine substitute for a non-alcoholic version)

Steps

    Boil the mixed dried fruit for 7 - 10 minutes in enough water to cover.

    Make a strong flavoured jelly using the liquid left over from the boiled fruit and the port or red wine.

    Put the boiled fruit into a pudding basin.

    Pour in the jelly and allow to set as usual. Unmould the jelly when set.

    Serve at the dinner table with a plastic holly decoration on top. Be sure to add cold custard, brandy butter or whipped cream to accompany it.
