How to Make Cinnamon Cream Soda

This article contains the basic steps to making Brian and John's Cream soda.


  • two tablespoons of cinnamon
  • two tablespoons of corn syrup (optional)
  • 1.5 cups of white (refined)sugar (regular sugar)
  • 1.5 cups of brown sugar
  • four teaspoons of vanilla flavoring or extract
  • between 1/8 and 1/16 of yeast (for yeast carbonation method.)

    Put cinnamon, sugar, and brown sugar in a mixing bowl.

    Mix vanilla extract or flavoring with the corn syrup ( if you choose to use corn syrup*) in another bowl. add enough water to make the mixture able to be poured into your two liter bottle.

    Put the cinnamon, sugar, etc... mixture in the 2 liter (0.5 US gal) bottle (a funnel will make it easier) if the brown sugar gets stuck wash it through with filtered water.

    Put the vanilla, corn syrup, water mixture into the 2 liter (0.5 US gal) bottle.

    Choose your method of introducing the fizz.
    • Dry Ice - fill the bottle up the rest of the way up to the beginning of the neck of the bottle with filtered water. you now have your completely flat soda.... time for carbonation.
      • Be very careful with the dry ice. Wear protective clothing, never seal the bottle completely, and don't drink it until it is completely dissolved.
      • Crush up at least 4 small pieces of dry ice
      • Place the pieces into the flat soda and put the cap on slightly TO WHERE AIR CAN ESCAPE FAIRLY EASILY (otherwise it will explode.. Known as a dry ice bomb....) When pieces stop bubbling seal cap and wait 2-3 minutes.( If bottle begins to expand or becomes extremely hard this means you should let a small amount of pressure out.)Repeat until you use 1 lb of dry ice or you feel it is carbonated enough. Enjoy!!
    • Yeast - If using the yeast method you should put 1/8-1/16 tsp of yeast into the 2 liter (0.5 US gal) bottle.
      • Assuming that you have placed your bakers yeast in the two liter bottle and you have filled the water up to the beginning of the neck, put the bottle in a dark place for 24-48 hours. Then chill the soda in the refrigerator for 6-24 hours. If you let the yeast ferment the sugar for too long the bottle will blow up. Putting the bottle in the refrigerator kills the yeast and stops it from creating any more carbon dioxide.

  • CO2 absorbs into cold liquid faster, so if using the dry ice method, refrigerate the soda first.
  • Monitor the dry ice to make sure it is done bubbling before you completely seal the bottle.
  • Use a funnel for putting ingredients into the bottle.
  • Don't use too much yeast or it will taste yeasty.
  • If you let the yeast sit in a warm cup of sugar water that is covered up, until it gets foamy before adding it to the 2 liter (0.5 US gal) bottle then the carbonation will go faster.


  • Make sure the bottle is not about to explode when putting the drink the the refrigerator.
  • Monitor the bottle after sealing. If it gets extremely stuff, let some pressure out.
  • Do not seal the lid while dry ice is creating mass amounts of CO2.
  • Any process that uses yeast as a fermentation agent has the possibility of creating alcohol.
  • Do not drink the soft drink until the dry ice is dissolved in the liquid. If you drink the small dry ice pieces before they have melted, and dissolved, they may burn your insides.
  • Be very careful with dry ice. Do not touch with bare skin.
  • Yeast Carbonized beverage may contain up to 0.35% alcohol.
  • This stuff is delicious and may become addicting.

Things You'll Need

  • One 2 liter (0.5 US gal) bottle with a lid
  • 1 lb of dry ice ( for dry ice carbonation method.)
  • Funnel
