How to Make Cinnamon Cookies for Christmas

This recipe can be made weeks or months in advance of Christmas and keep in your freezer until you are ready to make the cookies.

Ingredients

  • 225g flour
  • Pinch of salt
  • 2tsp ground cinnamon
  • 225g unsalted butter
  • 225g caster sugar
  • 2 eggs
  • 1tsp vanilla essence

    In a bowl, sift together the flour, salt and cinnamon. Set aside

    With an electric mixer, cream the butter until soft. Add together the sugar and continue beating until the mixture is light and fluffy

    Beat together the eggs and vanilla essence, then gradually stir into the butter mixture

    Add the dry ingredients to the butter mixture and stir together until evenly combined

    Divide the dough into four parts, and then roll each into a 5 centimeter (2.0 in) diameter log. Wrap tightly in foil and chill or freeze until firm

    Preheat oven to 190 °C (374 °F). Grease two baking sheets

    With a sharp knife, cut the dough into 5mm slices. Place the rounds on the prepared baking sheets and bake for about 10 minutes until lightly coloured. With a metal spatula, transfer to a wire rack to cool completely

Tips

  • You can add various items to this mix instead of cinnamon including cocoa for chocolate cookies
  • When the dough is frozen it can be stored for up to a year before baking

Warnings

  • You must use UNSALTED butter for this or you will get an overly salty taste after freezing
