How to Make Christmas Ice Cream Log
If you love ice cream and fruit mince, combine the two for a Christmas dessert treat that is not only delicious but simple too.
Ingredients
- 1 liter (0.3 US gal) of your favourite vanilla ice cream (dairy or soy)
- 200g fruit mince (bought or homemade)
Steps
- 1Cut out a large piece of the kitchen plastic wrap and lay it out on the counter-top.
- 2Remove the vanilla ice cream from the freezer and tip into the mixing bowl. Leave to slightly soften.
- 3Add the fruit mince and stir through quickly.
- 4Tip the ice cream and fruit mince mixture onto the plastic wrap. Working quickly to avoid further melting, roll into a log shape holding the plastic wrap. Leave about 10cm/4 inches of wrap at either end.
- 5Holding the ends of the wrap, keep rolling into the log shape. Once you have formed a tight roll, twist the ends up and tuck onto the roll.
- 6Place the roll into the freezer. Allow to properly freeze again.
- 7Serve. Serve in slices.
Tips
- This recipe will serve around 5-6.
- An alternative to rolling is to use a round cake mold. Either find a silicon one or line a tin one with the plastic. Simply pour in the mixed ice cream and place into the freezer. The pan will shape the log for you.
