How to Make Cheesy Tomato Sardine Bites

This is great party food and is especially for cheese lovers.

Ingredients

  • 2 – 3 cans of tomato Sardines (Non–spicy version, No–cooking required)
  • 1 can of cream cheese (any kind of cream cheese)
  • 1 tablespoon lemon or calamansi juice
  • 1 tablespoon horse-radish, finely chopped into very small pieces (As a meat extender)
  • 1 tablespoon water spinach, mashed and crushed into a paste (As a meat extender)

(Filipinos are very financially poor so they tend to use a lot of natural meat extenders in their cooking)

  • 1 – 2 sachet gelatin (dissolve in ½ cup warm water)
  • Brown sugar (Optional)
  • Parsley (chopped)
  • Salt to taste

Steps

    Mix all ingredients in a mixing bowl with an electric mixer until it reaches a sticky consistency. (This includes the gelatin, parsley, cream cheese and tomato sardines) Strain any excess liquid with a clean strainer.

    Set aside and scoop tiny bit of the mixture (at least the size of a duck’s eggs) to roll and shape as a ball.

    Make sure the mixture is shaped as a ball.

    You can use round ice container or other round moulds to help you get the desired rounded shape that you need in making these cheesy tomato sardine bites. These balls should only be 1 inch (2.5 cm) in diameter.

    Set aside again in a chiller. Wait until it becomes hard.

    Then serve in room temperature.
