How to Make Cheesy Chicken Spinach Stuffed Shells

These delicious chicken-stuffed shells make a great homemade dinner! Although they take a bit of time, these shells are both amazing to eat and easy to make!

Ingredients

  • 2 Large Chicken Breasts
  • 15 oz Box of Uncooked Jumbo Pasta Shells
  • 2 Cups Diced Fresh Spinach
  • 1/2 Small White Onion, diced
  • 3 Cloves Garlic, minced
  • 1 cup ricotta cheese
  • 8 oz Cream Cheese, softened
  • 1/2 cup of Parmesan Cheese, shredded
  • 1/4 cup Mayonnaise
  • 1 Tablespoon Parsley Flakes
  • 1/2 Tablespoon Italian Seasoning
  • 1 egg, slightly beaten
  • 2 SEPARATE cups Mozzarella Cheese, shredded
  • Salt and Pepper
  • 26 oz Jar of Spaghetti Sauce

    Preheat oven to 450 °F (232 °C).

    Sprinkle chicken breasts generously with salt and pepper and roast for 30-35 minutes.

    Bring a large pot of water to boil and add salt if you'd like. Boil pasta shells until Al Dente, about 12 minutes.

    Separate any broken shells and put all intact shells on a tray.

    When the chicken is done, dice two cups worth and set aside.

    In a large bowl, stir together chicken, onion, garlic, and spinach.

    In a separate bowl, stir together mayonnaise, ricotta cheese, cream cheese, and Parmesan cheese.

    Add parsley and Italian seasoning to the wet ingredients.

    Fold 1 cup of Mozzarella cheese into the wet ingredients.

    Add salt and pepper to taste, then combine cheese mixture and chicken mixture in a large bowl.

    Spread half of the jar of spaghetti sauce into the bottom of a 9x13 inch casserole dish.

    Stuff the shells with the chicken mixture and place in the pan.

    Pour the remaining sauce over the shells, then cover and bake for 30-40 minutes.
