How to Make Cannelloni with Chicken and Nuts

Let your imagination wander, and embrace the taste. Cannelloni wraps up all the pleasures of Italian cuisine.

Ingredients

  • 10 Cannelloni
  • 300 gr chicken, sliced into small pieces
  • 50 gr Parmesan cheese
  • 30 gr Mozzarella cheese
  • 1 carrot, diced
  • 1 package of chopped frozen spinach
  • Half an onion, diced
  • 100 gr chopped pine nuts
  • Half a glass of white wine
  • 20 gr butter
  • 1 small jar of tomato sauce
  • Salt and pepper
  • 750 ml hot milk
  • 45 gr butter
  • 45 gr flour
  • Nutmeg

Method 1
To make the Chicken Filling

    Roast or grill the carrot and the onion with the butter in a fryer.

    Add the frozen spinach, and cook until completely thawed.

    Add the chicken, and season with some salt and pepper.

    Add the wine and let it reduce.

    Add the nuts-- leave them in for 15 minutes.

    Put the chicken mixture in a blender and pulse; leave this to cool.

    Add the cheeses, and mix thoroughly.

Method 2
To make the Bechamel

    Melt the butter in a pot.

    Add some flour, a bit of nutmeg, and some salt.

    Stir the flour mixture continuously.

    Remove the bechamel from heat and add the milk.

    Return the pot to the stove, and continue stirring until the mixture boils.

Method 3
Assembling the Cannelloni

    Fill the uncooked cannelloni with the chicken filling.

    Oil a large casserole dish, and pour half of the jar of tomato sauce into it.

    Baste the cannelloni with some melted butter.

    Place the cannelloni into the casserole. Be sure to leave enough space between each one, as you don't want them sticking to each other.

    Cover with the bechamel sauce.

    Bake the food for 40 minutes in an oven at 200.

  • You can replace the pine nuts with almonds or hazelnuts.
  • For a different taste , you could replace Parmesan cheese with Pecorino.
