How to Make Boston Cream Topping

This makes an excellent and tasty cake topping, especially suited to plain cakes such as butter cake.

Ingredients

  • 1/3 cup (70g) sugar
  • 1/4 cup (30g) cornflour
  • 2 cups (475 ml) milk
  • 2 eggs
  • 1 teaspoon vanilla essence/extract
  • 60 to 90 g / 2 - 3 oz chocolate suitable for cooking, melted

    Pour the sugar and cornflour into a saucepan. Gradually pour in the milk, stirring all the time. Mix until all ingredients are well blended.

    Heat to boiling and continue stirring to prevent lumps from forming. Once boiling, reduce the heat and simmer for a further minute, while still stirring.

    Beat the eggs in a small bowl until light and fluffy. Pour the hot mixture in gradually with the beaten eggs, stirring constantly. Pour the entire mixture back into the saucepan and return to the heat, stirring well.

    Cook the entire mixture until it thickens and bubbles. Remove from the heat.

    Stir through the vanilla essence/extract and leave to cool slightly.

    Spread the slightly cooled topping over an already cooled cake. Leave the topping to set.

    Melt the chocolate. Drizzle this over the set topping. Leave to set.

    Serve. Once the topping has set, your cake is ready for serving.
