How to Make Beetroot Soup

Beetroot, or the roots of a beet makes a delicious and very low caloric soup. It can be enjoyed cold on a hot summer day, or served hot. Either way, it tastes delicious.

Ingredients

  • 2 Beetroots
  • 2 tsp basmati rice 2 tbsp Butter
  • 2 to 3 Cups water
  • Salt
  • Pepper
  • 3 oz sour cream

Steps

    Use a potato peeler and remove the beetroot skin and grate.

    Melt butter and add basmati rice and the grated beetroot.

    Add water or vegetable stock and seasonings.

    Bring to a boil and allow to simmer until the rice and beets are soft.

    Pour into soup bowls.

    Add a dollop of sour cream into the soup.

    Serve hot or cold.

Tips

  • For a thinner soup, strain so that all of the beetroot is removed.
  • Shred the beets instead of grating. Add a small, peeled potato and a dollop of sour cream, and you have a healthy and fast light lunch.

Warning

  • Wear gloves when handling the beets or your hands will get stained red.
