How to Make Barbecued Muffin Meatballs

These baked meatballs doesn't just have the taste of barbecue sauce on them, but also in the middle. Conveniently baked in muffin pans, they hold the structure of a ball, even when expanding and cooking. Here is how to make barbecued muffin meatballs.



Makes 12 meatballs.

Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 2 eggs, beaten
  • 1 1/2 cups seasoned dry bread crumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons onion, chopped finely

Sauce

  • 6 tablespoons brown sugar
  • 1/2 cup ketchup
  • 1/4 teaspoon nutmeg
  • 2 teaspoons dry mustard

    Preheat the oven for 400ºF/200ºC.

    Make the sauce. In a small bowl, mix the dry mustard, ketchup, nutmeg, and brown sugar together.

    Make the meatballs. Using clean hands, mash the ground meats, bread crumbs, eggs, chopped onion, and seasonings in a large bowl. Pour about half the sauce into the mixture and thoroughly integrate it into the meat mixture.

    Roll the mixture into 12 balls.

    Add them to a pre-greased deep muffin pan.

    Gently push your thumb down in the center of the ball mixtures to make small indentations. Pour the rest of the sauce in the holes.
