How to Make Banana Fritters with Evaporated Milk

Banana fritters made using evaporated milk can be a delicious source of calcium and a source of iron, both essential parts of a healthy diet. This recipe is easy to make and very tasty.


  • 1 360g tin of evaporated milk (such as Ideal, Carnation, etc.)
  • 4 medium-sized bananas
  • 4 eggs (beaten)
  • 50g sugar (optional, as the bananas provide sufficient sweetening)
  • 200g flour
  • Cooking oil (enough for frying)

    Pour the flour into a bowl.

    Peel and blend or mash the banana into a fairly smooth paste. Pour into a mixing bowl.

    Pour the beaten eggs into a small bowl, add the evaporated milk and sugar (optional) and lightly whisk. Add to the bananas and stir together with a wooden spoon.

    Add the flour, a little at a time, until all is added. The mixture should not be too thick.

    Heat a frying pan with a dessert spoon of oil at a time. Form the fritters a ladle at a time. Cook on both sides until the fritter becomes a light brown color.

    Roll up or fold into triangles when cooked.

    Serve. Serve hot or cold for a snack or a dessert with some ice cream or syrup.


  • Sprinkle icing sugar/confectioner's sugar over the top if desired.


  • Do not add a lot of sugar.
