How to Make Armenian Nutmeg Cake

A spicy cake that brings out the beauty of nutmeg as a key flavour.

Ingredients

  • 2 cups (250g) flour
  • 2 tsp baking powder
  • 1 1/4 cups (275g) brown sugar, packed firmly
  • 125g (9 tablespoons) butter
  • 1 tsp baking soda
  • 1 cup (240 ml) milk
  • 1 egg lightly beaten
  • 1 tsp nutmeg, freshly ground
  • 1/2 cup (60g) pecans or walnuts, chopped finely, or 4 tablespoons sesame seeds

    Preheat the oven to 180ºC/350ºF. Grease or line a round baking pan.

    Sift the flour, baking powder and sugar together in a large bowl.

    Rub the butter in quickly using your fingertips. Once the mixture becomes crumbly, cease rubbing.

    Pour one third of this mixture into the baking pan. Press in firmly.

    Using a fresh mixing bowl, dissolve the baking soda in the milk. Add the egg and nutmeg and beat together to combine. Pour this mixture into the remaining cake mixture and fold through completely.

    Pour this mixture into the pan, over the top of the pressed mixture.

    Sprinkle the chopped nuts or sesame seeds over the top of the cake mixture.

    Put the cake into the oven. Bake for one hour, or until a test skewer comes out clean from the cake.

    Remove from the oven and allow to cool on a wire cake rack still in its tin for half an hour. Only remove after this time. The cake can be eaten warm from the tin, or cool. If wished, sprinkle icing sugar over the nut topping for an added touch and taste contrast.
