How to Make Apricot Icing

If you like apricots, apricot icing can be a particularly delicious treat. This icing uses stewed apricots, so it's fresh and need to be eaten quickly but the taste sensation is worth it.

Ingredients

  • Stewed apricots – enough to make 1/2 cup apricot pulp
  • 1 1/2 cups pure icing sugar
  • 1 tablespoon soft butter
  • 1/2 tablespoon lemon juice

    Sieve the stewed apricots. Retain the liquid pulp in a jug or cup for use. You will need 1/2 cup for this recipe.

    Sift the icing sugar into the mixing bowl.

    Pour in the apricot pulp. Mix briefly.

    Add the softened butter and the lemon juice. Beat or whisk in until smooth.

    If needed, add more icing sugar to achieve the right consistency.

    Use. Spread the apricot icing over the cake. Leave to set (time will depend on humidity). Once set, it's ready to serve.
