Steps

    1
Purchase an apple. Choose an apple that sits up straight and is even on the top and bottom. It also needs to be tall.

    2
Cut the apple in half from stem to base using a sharp knife. (You might want to cut 1/3 off and use the larger part, depending on the size of your apple.) This will give you large pieces to work with when you create the wings. The wings are formed by iterative cuts on sections removed from each side of the apple.

    3
Select and retain two seeds from the apple halves. These seeds will be used at the end when you insert them into the head of the swan as eyes.

Place half of the apple between two butter knives. The butter knives will act as stops to keep from cutting too deeply on the vertical cut and as a guide on the horizontal cut.

Cut straight down on one side of the center about a half centimeter from the center line (slightly less than a quarter inch). This will leave a central piece which can be notched to accept the head. Leaving too little in the central part will make it tougher to cut the rectangular notch to house the head.

Cut horizontally, using the handles of the butter knives as a guide. This will give you the initial piece for the smaller wing pieces.

Remove the piece that was cut, leaving the area where the wings will be assembled.

Place the piece you removed between the handles of the butter knives. Cut vertically 0.5 cm (0.25 in) from the last cut and parallel to it. Then, using the butter knives as a guide, cut horizontally and remove the smaller piece.

Repeat the above step two more times.

Arrange the wing pieces in a stagger, from momma to baby.

    11
Repeat the steps on the other side of the center line to form the other wing.

Cut a rectangular notch into the center piece. This will accept the head. If the sides of the notch are not stable, use half a toothpick where needed.

Visualize the head. Referring to the images (above and below), imagine how you will create the head. You will cut at the proper angle to create the beak.

Cut and remove an appropriate "V" using the beak cut as one of the sides of the "V." This will determine the look of the head.

    15
Cut straight to remove the excess. (Refer to image.) Insert the seeds where you visualize the eyes and place the entire piece into the rectangular notch on the base.

Observe the final product! Sprinkle all cut surfaces with lemon juice to keep the apple from browning.
