How to Make Amaranth Porridge

Amaranth porridge is tasty and full of nutrients. The important step is soaking the grains to remove the phytic acid; if you don't do this, then the nutrients cannot be accessed by our digestive system. This article sets out what to do to make sure that you get all the delicious benefits.

Ingredients

  • 1 cup amaranth
  • 1 can coconut milk
  • 2 cardamom seeds
  • 1 cinnamon stick
  • 1 handful favourite dried fruit
  • 1 tablespoon whey

    Soak the amaranth grains in 2 cups of water. Add the tablespoon of whey. Leave to soak for 24 to 48 hours; the longer, the better.

    Drain the water through a sieve or small holed colander.

    Put the amaranth grains, coconut milk and remaining ingredients into a saucepan with one cup of water.

    Bring to the boil for one minute, stirring. Reduce the heat and simmer on low heat. Keep cooking until the grain swells.

    Turn off the heat. Leave the mixture to settle for 20 minutes. During this time it forms into a porridge.

    Serve. It is great with maple syrup, chopped fresh fruit, or yoghurt drizzled over it.
