How to Make Aloo Dum (Baby Potato Curry)

This article will tell how to prepare aloo dum (Indian cuisine made from baby potatoes, in tomato base).

Ingredients

  • 1/2 kg boiled peeled baby potatoes
  • 1 tsp ginger - garlic paste
  • 2 finely chopped green chilies
  • 2 large onions (finely chopped)
  • 1/2 tsp turmeric powder
  • 3 tbsp coriander powder
  • 2 tsp red chili powder
  • 1 tsp curry powder
  • 1 tsp garam masala powder
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 2 tbsp Vegetable oil
  • 2 medium / large tomatoes (chopped or made into puree - as per your preference)
  • 1/2 tsp cumin seeds
  • Chopped coriander leaves to garnish

    Peel the potatoes, and prick all over with a fork (don't prick too much).

    Boil the potatoes (add salt to the water while boiling, to fasten the process). You may also use a microwave oven to boil the potatoes.

    Add vegetable oil to the pan and allow it to heat for some time.

    Add cumin seeds and allow to spatter.

    Add chopped green chilies and sauté.

    Add chopped onions and fry until translucent.

    Add ginger garlic paste and stir until the raw smell is gone.

    Add tomatoes (chopped or pureed), cover the lid and allow it to cook for about 5-10 min.

    After 10 min, check the tomatoes and add the spices (red chili powder, turmeric powder, coriander powder, curry powder).

    Cover the lid again and allow to cook for another 10 minutes (or till cooked).

    Add boiled baby potatoes to the mixture and mix until all the potatoes are coated properly in the gravy.

    Add a little bit of water (about 1 cup), preferably the starchy water (the water left after the were potatoes boiled... it gives a better taste) and mix.

    Cover the pan and bring it to boil.

    Add a pinch of garam masala powder and cover it for one more minute.

    Serve in a bowl and garnish with freshly chopped green coriander leaves.

Tips

  • A heavy bottom flask is suitable for this recipe.
  • You can also use unpeeled potatoes, by cleaning and scrubbing them properly with a clean toothbrush.
