How to Make a Vegetarian Taco Pie

Vegetarian taco pie is a quick and easy dinner solution when you want something tasty and filling for little effort. You can either make the dough or use dough that's pre-made to speed up the process a little more. The vegetarian taco pie is great for dinner, a party snack or as a side dish just because you love the flavors.

Ingredients

Dough:

  • 400g plain/all-purpose flour
  • 2 tablespoons of baking powder
  • 1/2 teaspoon salt
  • 50 butter
  • 150ml milk
    • Or, use a pre-made pastry base from the store

Filling:

  • 3 carrots
  • 500g vegetarian minced meat (if dried, rehydrate it first)
  • 1 tablespoon oil
  • 1 bag taco spice mix
  • 2 garlic cloves, chopped finely
  • 100ml water
  • 4 tomatoes
  • 200ml of crème fraiche (or a vegan alternative)
  • Mayonnaise
  • Grated cheese

    Heat the oven to 200ºC/400ºF.

Part 1
Preparing the dough

    Mix the flour, salt and baking powder with the butter to form a dough. Roll the dough out flat, slightly wider than the shape of the pie or baking pan.
    • If you're using pre-made dough, skip this step.

    Put the dough into a baking pan with high edges. Form the dough or pastry to the shape of the baking pan or dish by pressing it up the sides and gently across the base.

Part 2
Making the vegetarian mince filling

    Peel and dice the onions and carrots.

    Tip oil into the frying pan. Add the vegetarian mince, garlic, onion, carrots and fry until softened. Do not allow to overcook.

    Add the taco spice mix and the water. Mix together until well combined.

    Let the mixture fry until the water has almost gone.

Part 3
Assembling the taco pie

    Transfer the fried vegetarian mince filling to the dough base in the baking pan.

    Slice the tomatoes into thin rounds. Put the sliced tomatoes across the top of the vegetarian mince filling.

    Mix the crème fraîche, mayonnaise and grated cheese together.

    Spread this mix over the top of the tomatoes and vegetarian mince filling. This serves as the topping.

Part 4
Baking and serving the taco pie

    Bake in the oven for 35 minutes. When the top is nicely golden or slightly browned, it's ready to serve.

    Serve. Cut into pie wedges and place on serving plates. Serve with steamed vegetables, nachos or a salad.

Tips

  • Store the leftovers in the fridge for up to three days, then reheat it for another day.
  • A vegan topping can be made using vegan crème fraiche substitute mixed with plain hummus and grated vegan cheese. Or, experiment with other suitable toppings, such as mashed potato or mashed sweet potato.
