How to Make a Vegetarian Shepherd's Pie with Quorn

Mouthwatering and tasty, this article contains a vegetarian recipe for shepherd's pie.   • Filling
    • 1 packet of Quorn mince
    • Pinch of salt
    • Black pepper to taste
    • Mixed herbs
    • A pinch of paprika
    • Sliced frozen onions, equal to 2 large onions, diced
    • Frozen carrots/turnip, equal to the amount of 1 large cupful diced,
    • 2 potatoes sliced and diced
    • 3 frozen mixed peppers/ sliced and diced
    • 1 small cup frozen peas
    • 1 small cup sweetcorn
    • 1 small cup of sliced mushrooms
    • 1 large cup cooked and diced aubergine (eggplant)
    • 1 large cup of drained asparagus spears
    • 2 vegetable stock cubes
    • 2 large tins chopped tomatoes and tomato juice
    • 1 finger length size of concentrated tomato puree
    • 4 tablespoons tomato ketchup
    • 2 tablespoons sugar (to counteract the acidity of the tomato products)
    • Tomato puree and tomato juice
    • 2 crushed cloves of garlic
  • Potato topping
    • 6 quartered, peeled potatoes
    • Salt for cooking water
    • Margarine or butter
    • Pepper
    • 1/4 cup grated cheese
    • 1/3 teaspoon of French mustard
    • A good splash of milk

Part 1
Making the filling

    Prepare the vegetable filling ingredients. Dry fry all of the prepared vegetables in a frying pan. Add the seasonings.

    In another pan, heated first, place the Quorn mince.
  3. 3
    Add boiling water. Place into the Quorn mince pan the vegetable stock cubes, chopped tomatoes and tomato juice. Then add the concentrated tomato puree, tomato ketchup, sugar (to counteract the acidity of the tomato ketchup, and tomato puree and tomato juice). Add the 2 crushed cloves of garlic.

Part 2
Making the topping

    Prepare the topping. Boil the quartered, peeled potatoes in salted water for 25 minutes.

    Drain and add the margarine or butter, pepper, and grated cheese. Also add the French mustard, and a good splash of milk. Mash and beat potato mixture until smooth.

Part 3
Making up the shepherd's pie

    Add the vegetable mix to the Quorn mince and stock mixture. Cook and simmer for 25 minutes.

    Transfer to an oven dish. Ensure it comes with a good soaking of stock, then add the potato mix on top and another sprinkle of grated cheese for topping.

    Bake for 30 minutes. Remove when cooked, wearing oven mitts.

    Serve immediately and enjoy. It can be served on diner's plates or placed on a trivet in the center of the table and diners can help themselves to it.
