How to Make a Lemon Swan Garnish

This is a flat garnish suitable for using on seafood, mousse, and pâté dishes. Garnishes can enhance the appeal of a dish and are ideal for special occasions such as dinner parties, weddings and cocktail events.

Method 1
Preparing the Lemon

    Cut the lemon into slices. Make the slices fairly narrow, about 5mm/ 14 inch (0.6 cm) in thickness.

    Cut each slice in half.

    Remove most of the peel as follows:
    • Cut between the pith and the peel, cutting along the length of the lemon slice.
    • Do not cut all the way. Leave the peel attached at the other end of the slice, with enough section connected to prevent the peel from coming off.

Method 2
Forming the Swan Garnish

    Place the lemon slice where you want it to serve as a garnish.

    Gently loop the cut away peel back toward the lemon slice. Then tuck it back into the backside of the peel to form a teardrop or leaf shape. This forms the swan's neck and head.

    Repeat for the remaining lemon swans.
    • If you have a group of swans, arrange them closely together for best effect.

Tips

  • This is best done just before serving the dish or placing on display.
