How to Make a Halloween Red Eye Cocktail

This Halloween twist on the red eye cocktail uses gin and Cointreau with a red cherry acting as a "red eye" addition. It's a great nightcap for after you've put the trick-or-treaters to bed.

Ingredients

  • 2 oz. (60 ml) gin
  • 1 oz. (30 ml) Cointreau
  • 1/2 oz. (15 ml) lemon juice
  • 1 tsp. (5 g) sugar
  • 1 tsp. egg white
  • 1 red cherry
  • A few chocolate chips
  • Ice cubes

    Fill the shaker with ice.

    Add the gin, Cointreau, lemon juice, sugar, and egg white.

    Place the lid on top of the cocktail shaker.

    Give it a long shake. Shake until the shaker feels very cold to the touch or until condensation forms on the outside.

    Strain the cocktail into a martini glass.

    Drop a cherry into the bottom of the glass with a pair of tongs. Spoon in some chocolate chips over the cherry.

Tips

  • If you don't have cherries on hand, use a pimento-stuffed olive for the eyeball.
  • Feeling particularly ghoulish? Skip the cherry and float a plastic eyeball in the drink instead.

Warnings

  • If you're concerned about using a raw egg white in your drink, then use a pasteurized egg white.
