How to Make a Gluten Free Christmas Cake

Christmas cakes, sometimes known as fruitcakes, are a baked dessert that usually contains flour, fruit and nuts. The cakes are common in the UK, the US, Japan, the Philippines and English Commonwealth countries. There are many variations on the moistness, the use of frosting and the use of alcohol in the recipe; however, most are made with flour. If you have a gluten intolerance or celiac disease, this may be a dessert you usually stay away from. However, with the rise of gluten-free baking, you can make a few substitutions to create a gluten-free fruit cake. This article will tell you how to make a gluten-free Christmas cake.

    Soak a mixture of 1 1/3 cups (225 g) raisins, 1 1/3 cups (225 g) dried apricots and 1 1/3 cups (225 g) dried currants in 4 oz. (118 ml) of rum and 4 oz. (118 ml) of water for 24 hours. You can also use sherry, ruby port or brandy and any dried fruit of your choosing. Soaking the dried fruit will help the cake to retain its moisture.
    • If you do not want to use alcohol in your Christmas cake, place the dried fruit in a saucepan with 1 cup of fruit jam (236 ml) and 4 tbsp. (59 ml) of water. Place the burner on medium and let the fruit heat until it softens. Stir occasionally.
    • Make sure to check the packages of the dried fruit carefully to be sure that the product is gluten-free. Some fruit is rolled in wheat flour.

    Melt 5 tbsp. (80 g) of butter in a small saucepan on the stove top or in the microwave.

    Preheat your oven to 300 degrees Fahrenheit (150 degrees Celsius). People in higher elevations, above 3,000 feet (914.4 m), should preheat the oven to 325 degrees Fahrenheit (163 degrees Celsius).

    Pour the fruit and rum into an electric mixer. Add 8 eggs and 1 cup (225 g) of granulated sugar, brown sugar (light muscovado) or honey. Mix slowly.

    Add 1 tbsp. (7.5 g) of ground cardamom, 1 tsp. (2.5 g) of ground cinnamon, 1 tsp. (2.5 g) of ground nutmeg and a pinch of salt into the mix.

    Add 1/2 cup (58 g) of chopped walnuts, if you would like nuts in your cake. Mix well.

    Pour in 2 cups (170 g) of almond flour. If you have a nut allergy, you can use gluten-free flour.

    Mix the batter well, until all the ingredients appear evenly combined. Your batter should be very fluid, which will make for a moist cake.

    Grease a cake pan with butter or non-stick spray. Pour the batter into your greased cake pan. Place it on a center rack in the oven.

    Bake for approximately 1 hour. Insert a toothpick or knife into the center of the cake. It is done when the toothpick comes out clean.

    Remove the cake from the oven and place it on a cooling rack. Allow it to cool for 2 hours before removing it from the pan. This cake serves about 10 people.

Tips

  • Always check every ingredient you buy for a gluten-free recipe, for flour and other gluten products. Many common cooking ingredients are processed with, or nearby, regular flour, making the result not entirely gluten-free.
  • You can also soak your dried fruit in 1 cup (236 ml) of fruit juice, like orange juice, to soften them.
  • Add 1/4 cup (33 g) of candied orange peel or candied ginger to the mix, at the same time you add the walnuts, for an extra kick. You can also garnish the cake with these ingredients.
