How to Make a Fiesta Loaf

A Fiesta Loaf is a 'south of the border' meat ring with some rice to go with it. Learn how easy it is to make here!

Ingredients

  • 2 pounds lean ground beef (or your meat of choice)
  • 1 1/2 cups bread crumbs
  • 1/2 cup diced onion
  • 1/2 cup ketchup
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • Green pepper rings and tomato wedges for a garnish

Steps

    Mix all of the ingredients together in a large bowl except for the rice and the garnishes.

    Shape into a ring on a very lightly greased ring mold.

    Bake at 350 °F (177 °C) for 1 hour.

    Drain well.

    Remove the ring from the mold and put on the serving plate.

    Fill the center with the Confetti Rice.
