Homemade cutlets are vegetable-based cutlets that would once see families through lean times. Nowadays they are a good vegetarian meal that is budget-conscious, tasty and a good way to hide a lot of veggies inside one tasty patty!

Ingredients

Cutlet:

  • 2 cups of boiled potato
  • Half cup of boiled green peas
  • Half cup of boiled carrots, finely chopped
  • 2 green chillies, chopped
  • Bread crumbs
  • Half tsp of red chilli
  • Half cup cornflour
  • 1 tsp Garam Masala
  • Salt to taste
  • Cooking oil

Cutlet with beetroot:

  • 1/2 onion
  • 1/2 cup carrot
  • 1/2 cup peas
  • 1/2 cup beetroot
  • 1/2 cup capsicum (bell pepper)
  • 2-3 large potatoes
  • Turmeric powder
  • Salt to taste
  • Garam masala
  • 1/2 cup cornflour
  • Water
  • Breadcrumbs
  • Cooking oil

Method 1
Cutlet

    Mix potatoes, green peas, carrots, grated ginger, red chili powder, garam masala, turmeric powder, and salt.

    Mix cornflour and potato mixture and knead to make a smooth dough.

    Take this mixture and make a shape (any shape you wish)

    When you finished shaping the potato mix, roll each cutlet piece in bread crumbs

    Heat oil in a deep frying pan

    Then deep fry the cutlets until golden brown.

Method 2
Cutlet with beetroot

    Dice the onion, carrot, peas, beans, beetroot and capsicum finely. Mix them together. Leave aside.

    Peel and boil the potatoes for 10 minutes. After boiling the potatoes, mash them.

    Mix all the cut pieces with the mashed potato. Add a dash of turmeric powder, salt to taste and up to 1/2 teaspoon garam masala.

    Shape the mixture into balls. Use the base of your palm to flatten them.

    Mix the cornflour with water. Dip the flat balls into it.

    Sprinkle breadcrumbs on each side of the patty cutlet. This will give it a crunchy taste.
