How to Make a Chinese Bean Paste Bun

    Mix red bean paste with sugar (make sure to add water while mixing and be sure the sugar dissolves into the bean paste.

    Add water and baking soda to the flour.

    Stir the flour with your hands (make sure flour is moist at all times during the stirring process).

    When you are finished stirring, leave the flour in a container for 1 hour. This will make the baking soda take effect. Do not leave it under the sun.

    After 1 hour, knead the flour ball for 3 to 5 minutes. This depends on your strength, however, if this is your first time, do it for 5 minutes.

    Take a single handful of flour from the flour ball.

    Make it into a bowl shape, and insert an amount of mixed red bean paste. Do not put in too much or the bun will not close, or it might leak during the baking process.

    After sealing the bun, use a brush and brush egg white on top of bun, and put in oven for 8-10 minutes.
