How to Make a Berbere Spice Mix

This is used as a traditional flavouring for Ethiopian stews (wots).

Ingredients

  • 10 dried red chilies, chopped
  • 1/2 tsp coriander seeds
  • 5 cloves
  • Seeds from 6 cardamom pods
  • 1/2 teaspoon ajowan seeds
  • 8 allspice berries
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon fenugreek seeds
  • 1 small cinnamon stick, broken into smaller pieces
  • 1/2 teaspoon ground ginger

Steps

    Heat the heavy based pan or skillet until hot.

    Place the spices into it. Dry roast the spices for 2-3 minutes, constantly stirring.

    Once the spices darken, remove from the heat. Allow to cool.

    Grind the dry roasted spices. Add the ground ginger and mix through.

    Transfer to an airtight jar. Use in Ethiopian cuisine.

Tips

  • This mixture will keep for up to 3 months.
