How to Infuse in Minutes Instead of Days

You can use a nitrous oxide powered whipped cream dispenser to infuse liquors or oils in mere minutes instead of days or weeks.


  • Liquid to be infused; olive oil, vodka, rum, almond oil, bourbon etc...
  • Thinly sliced fruit or fresh spices (apples, orange peel, coffee beans, basil, rosemary, bacon etc...)

    Prepare your fruit and/or spices the same as you would for regular infusion.

    Pour the liquid you wish to infuse into a whipped cream dispenser, one that uses nitrous oxide cartridges.

    Add the spice, fruit or other item you want to infuse your liquid with.

    Insert a cartridge, crank it down and "crack it" to release the gas and start the infusion process. Let the dispenser sit for about one minute.

    Replace the cartridge with a new one. Crack it, and shake the dispenser for another minute.

    Hold bottle upright and aim the nozzle into a glass held upside down over another glass. Gently squeeze the trigger to release the gas, keep your dispenser upright, if you turn it upside down all the liquid will spray out, the upside down glass is to catch any stray spray from overzealous trigger squeezing.

    After all the gas is released, crack open the container. Pour the contents through a strainer into a glass.

    Bottle your results and give as gifts, or create something delicious to consume right away.


  • The thinner you cut your fruit, the more flavor you will get out of it.
  • remember when off gassing to keep your dispenser in an upright position, otherwise you will spray out all the liquid and it won't infuse correctly.
  • Used nitrous cartridges should be okay to include in your curbside recycling bins.


  • Nitrous Oxide will kill brain cells and is extremely flammable; do not inhale or expose uncracked cartridges to flame.
