How to Ice a Christmas Cake (Marzipan)
Icing a Christmas cake can enhance its appeal and create a "snowy" look. The instructions here will show you how to use marzipan as an icing topping for a Christmas cake that you've already baked.

Ingredients
- 1 packet of pre-rolled marzipan
- 750 g / 26.5 oz icing sugar
- 100 ml / 3.5 fl oz cold water

- 3Squeeze the marzipan around the edges. Use your fingers and whole hand, gently pressing down, so that it fits firmly over the cake. Cut off any excess marzipan to tidy it up.

- 5Ice the cake.
- Using the spatula, spoon a dollop of icing sugar on the cake and spread it over evenly.
- Spoon on a little more and spread it over around the sides. Continue spreading until the entire cake has been covered.
- Smooth over and around the fringe of the cake as a final finish. Make sure it looks neat.
- 6Once iced, place the cake into the fridge for half an hour to chill and set.

- Serves: makes icing for one 500g cake.
