How to German Pan Fried Sea Bass with Broccoli and Lemon Vinaigrette

If you've ever tried German pan fried sea bass, you know just how delicious it can be. And if you haven't, then here's a recipe for you! Take a new twist on regular sea bass with this delicious recipe.

  • Lemon
  • Broccoli
  • Boiled water
  • Salt
  • 2 tbsp olive oil
  • Pepper
  • Hot sauce

    Prepare the ingredients. Cut the fillets so they have the same shape, then carve the skin to reach the meat 5-6 times the distance of 1 centimeter (0.4 in). Set aside.

    Cut the lemon. Remove the top and bottom peel and membrane. Separate segments and squeeze the juice into a bowl. Cut the broccoli florets in medium bunches.

    To prepare the warm broccoli salad, place bouquets in a pot of boiling water for a minute, salted to al dente consistency. Place a pan on the fire, and as soon as the broccoli is ready, drain and place in the pan to remove remaining liquid.

    Stop the fire and place lemon slices over broccoli. Stir a few times, then place it in a bowl and add the lemon juice and 2 tablespoons of olive oil. Season with pepper and a pinch of salt, then set aside.

    Clean the pan and fry the fillets. Allow them to rest on a warm plate, skin side up, and then sprinkle them with hot sauce.

    For a perfectly pan-fried fish, the fish should be at room temperature and fry just before seasoning with salt and pepper. Heat a Teflon pan well with 2 tablespoons oil. Place the fillets in the pan, skin side down.

    Press each fillet with your fingers or another piece of fish that doesn't curl as soon as you put the fillets in the pan. Leave the fish in the pan on low heat for 3-4 minutes until the skin is crisp and nicely coloured.

    Fry for 2 minutes skinless side, taking care to cover the fish occasionally with the oil from the pan.

    Place 2 tablespoons of oil in the pan. Add capers and anchovies and fry them until they are crisp. Grate the lemon zest and squeeze over half the lemon. If there isn't enough sauce for two servings, add more oil.

    Plate your dish. Place the broccoli in a circle on two hot plates, so that the stems are all directed inward, Place the lemon slices over broccoli and sprinkle with the remaining sauce in the bowl.

    Place the fish fillets carefully over the broccoli and lemon circle trying not to spoil how it's arranged. With a tablespoon place capers and anchovies with the fish, pouring the sauce from the pan over and around it all. Serve immediately and enjoy!
