How to Decorate Carrot Cupcakes

Carrot cupcakes and cake are ever popular at weddings, cafes and markets. Here's an easy way to decorate your favorite carrot cupcakes.

Ingredients

Cream cheese frosting (enough for 12 cupcakes)

  • 60 g Softened Butter
  • 200 g Cream cheese
  • 1 tsp Vanilla extract
  • 3 cups Icing sugar, sifted
  • 1 tsp Lemon Juice

Steps

    Bake a batch of carrot cupcakes, using a recipe of your choice.
    • Let the baked cupcakes cool properly before frosting them.

    Keep the cream cheese in the fridge until just before use.

    With an electric hand mixer, or freestanding mixer with paddle attachment, cream the butter for about 1 minute, or until light and fluffy.

    Add the cream cheese, the vanilla extract, the lemon juice and 1.5 cups of sifted icing sugar.

    Beat until light and fluffy.

    Add the remaining icing sugar and beat until combined.

    Spread a dollop of frosting on top of your cupcake. Alternatively use a piping bag and pipe a neat dollop onto your cupcake.

    Decorate with a walnut halve, carrot ribbon or fondant/gum paste carrot.
