How to Cook Salted Fish with Young Mango

Salted fish and mango is a very common food article in Southeast Asia. They can be found anywhere from the local vegetable markets or Tamu, to most upscale shopping malls. While either of these food items can be eaten on its own, mixing the two in a dish together will send a foodie into a gastronomical euphoria.

Ingredients

  • 500 grams of salted fish - These can be bought from the local farmers market or supermarket. There would be a myriad of choices available according to which part of Asia you're in, but a good rule of thumb to follow is make sure the fish is firm and not soggy or brittle to the touch.
  • 500 grams of mango - These can be bought or bartered from any local market, supermarket or unsuspecting neighbour. The mango should be relatively green and fresh off the tree. But if none of such quality is available, slightly ripening mangoes are acceptable (though it will take some of the crunch factor from the dish.)
  • 1 large onion
  • 3 small Asian/1 large Bombay shallots
  • Half a clove of garlic
  • An inch of ginger
  • A handful of white chillies
  • A handful of red chillies (according to taste)
  • Sugar
  • A cup of oil

Steps

    Wash and cut salted fish to manageable rectangles or squares

    Wash mangoes and peel off skin. Cut approximately into the same size as the salted fish.

    Wash and roughly chop the side ingredients and set aside.

    Heat a wok and add oil.

    When the oil is hot, fry the the salted fish until it is crisp but not burnt. Put it aside.

    Take out the oil from the fish fry and wash the wok.

    Heat the wok again and fry the side ingredients for 2 minutes.

    Add the chopped mangoes and fry for a further 3 minutes, stirring occasionally.

    Add the fried salted fish to the wok and mix thoroughly.

    Add sugar according to taste.

    If the mixture is too dry, 2 tablespoons of water can be added.

    Serve immediately while hot.

Tips

  • This dish is best served hot from the wok with cold rice or topod (as it is locally known in Sabah)

  • This dish can cause overeating and subsequently obesity.
